Mmmm Focaccia Bread….

 

I’ve been missing in action because I’ve been very lazy about posting.  Very lazy in posting.  I’ve been busy with the kids in school and their activities.  The last few days I’ve been locked in a hockey rink because Daniel has been trying out for Tier Hockey.  Yup.  Tier Hockey.  I’m not exactly thrilled about Daniel playing in Tier because it’s going to be a bigger commitment on our part as parents and Daniel.  More practices, tournaments, games, out of town games…it’s not going to be pretty.  But Daniel wanted to make Tier 2 Hockey.  Tier 1 Hockey is the best of the best hockey with great hockey players.  Daniel was evaluated with other Tier 1 hockey players and he held his own.  Unfortunately, there were more players that was just a tiny bit better than him.  So, now he’s in Tier 2 hockey and tomorrow will be the Split Squad game in which they determine which hockey player will go to which Tier 2 team.  This year, the division had enough kids to have two Tier 2 teams.  Tomorrow night will be another night at the hockey rink…let the games begin!

 

Despite being pulled in two different directions with the kids activities, I’ve been trying to have some “me” time at night when the kids go to bed.  “Me” time is now becoming what am I going to drink tonight time!  I’m finding I’m having “happy hour” almost every night when the kids go to bed.  Am I worried that I’m becoming a boozer?  No, not at all.  I know my limits.  LOL!  Actually, I’m not a good drinker and I get pretty woozy after one drink.  I’ve been drinking wine lately.  I’ve never been a wine drinker, but lately I’ve been enjoying a glass of wine at night.  It relaxes me and I just like the idea of sitting on the couch, watching one of my favourite tv show or reading and enjoying a glass of wine.

For those that are wondering:  I didn’t drink both bottles to myself.  The bigger one was for my Mother Inlaw’s birthday and the smaller was drunk over a week time span.

These were actually white wine.  I’m more of a red wine kind of girl, but white wine will do when you need a glass of wine to unwind.

This is what I’ve been drinking the last couple of days.  Another white wine and very delicious!

Of course, if no wine is around.  I always turn to my very best friend…

Nothing like a cold beer on a hot day!  I usually like to drink my beer with clamato juice.  I love clamato!

With the weather being nice, the kids have been outside a lot enjoying the awesome weather before winter comes.

This means that summer is long gone and things of summer will have to be put away or put to death lol!  Our swing set that we’ve had for over five years has had better days and now it’s on it’s last legs.

There was so much rust on the swing that the bars broke in half and now it can’t be fixed.

And there is so much rust everywhere that this swing will be sent to the junk yard in the next couple of weeks.

One of my favourite meals to make and that the family loves to eat is spaghetti and meatballs.  Tonight’s supper was my homemade spaghetti with meatballs.  We usually have garlic bread with spaghetti, but I didn’t have any on hand.  I looked through all my cookbooks and decided to make Focaccia Bread from Company’s Coming Italian cookbook.

Focaccia is a delicious bread made from olive oil and flour.  I remember when my husband worked at CGI, there was a restaurant nearby that made sandwiches out of focaccia bread and it was to die for!  I haven’t had Focaccia Bread in such a long time that I decided to make it with tonight’s supper.

Cover my dough and stick it in the over and hopefully it’ll double in size!

Then roll it onto a baking sheet and put red onions, olive oil, garlic powder, and oregano.  Let it sit for thirty minutes then stick it in the oven at 400 degrees for thirty minutes.

I wish I had a picture of the finished product, but unfortunately supper was running late and people were hungry.  I will say that it was absolutely delicious!

Well, that’s it for now.  I do have pictures of Andrew first day of skating, but that will be for another day.  I’m getting pretty lazy and I think my glass of wine is calling me!
