Time to get more veggies in…

 

My goal for 2011 is to try to post every other day or two days depending on how busy I am.  This is my second post in two days so that’s a start!  Right?  I’m going to make an effort to try to keep this blog running with posts that will keep you interested Smile

 

Today’s post is about getting your veggies in.  Now that the holidays are over and indulging in wonderful food is a thing of the past, what better way to get your body back into a healthy state is adding more vegetables into your diet!  The other day I went into the city on a hunt for something called a “Chop Wizard”.  One of my friends was telling me about how wonderful this tool is for chopping food up easy and quickly.  I went to a few stores and I couldn’t find a Chop Wizard.  But I did find a Hamilton Beach: Food Chopper.  It was only $21.99 and I decided to pick it up.

When I got home, I immediately tested it out.  The chopper included a small recipe booklet and it had a salsa recipe.  I decided to use the chopper to make the salsa recipe Smile

Salsa recipe consisted of half of a red onion, two garlic gloves, cilantro, lemon juice , tomatoes, and salt and pepper.

The salsa recipe called for lemon juice, but I decided to use fresh lime juice.  Over Christmas Wayne got a Bacardi White Rum Gift Set which include a bottle of white rum, a mix/shaker, and a lime/lemon presser.  I decided to use this opportunity to check out how good the presser is.

The presser was awesome and I squeezed a lot of juice from the lime Smile

Again, I apologize for the picture Sad smile  I’m still trying to get use to the new camera.  I don’t think this picture does the salsa justice because the salsa was awesome!

 

2010 was a year where I evaluated how I eat.  2010 I pretty gave up meat.  I don’t eat any red meat and occasionally I’ll eat chicken.  I’ll eat fish too, but it’s not my main source of protein.  My main source of protein has been in beans (lots of beans), lentils, and nuts.  I also discovered the magazine Clean Eating.

This is actually my first copy of Clean Eating and I’m planning on picking up more magazines throughout the year.  I poured over the magazine for hours just reading up on all the wonderful recipes that I will be making.  I really wish that Wayne and the boys would eat like this, but they are so set in their ways that it makes me sad Sad smile  They are missing out on completely different eating experience that will make you healthy and feel great!

Last nights supper was a recipe from Clean Eating.  I made Quinoa and White Bean Chili.

This was my first time having quinoa and it was very good Smile  I had to add more spices to the chili because there wasn’t enough taste to it, but overall it was a very good chili and I plan to make it more often.  I tried looking for the recipe online to post, but I couldn’t find it.  If you would like to know the recipe, let me know and I can type it out!  Smile
